Origin vineyards 11 Chardonnay vineyards, with an average age of 35 years, located in the municipalities of Erbusco and Cazzago San Martino. 2 Pinot Bianco vineyards, with an average age of 30 years, located in the Municipality of Passirano. Harvest Winter 2022 was characterized by a climate that was not too harsh and, as often happens in recent years, by little rainfall. At the end of March, about a week later than the previous year, the Chardonnay and Pinot Noir vines produced their first shoots. Afterwards, flowering was very fast, concentrated in the second half of May. This first vegetative phase characterized by the absence of precipitation and high temperatures favored, on the one hand, healthy grapes but, on the other, meant that the looser soils began to suffer from water stress already around June 20th. In the three crucial months for the vegetative growth of the vine, less than a quarter of the millimeters that have been recorded on average in the last ten years in the same period fell. The first rain occurred on the evening of Thursday 28th July, bringing with it obvious benefits which were not, however, sufficient to satisfy the "thirst" of our vineyards. In some plots, it was therefore necessary to resort to emergency irrigation systems in order to safeguard the qualitative production of the year. The harvest began on Saturday 6 August. Two rain events at the end of the harvest, one on the evening of August 15th and one a few days later, definitively marked the end of the heat and drought, postponing the end date of the harvest to Saturday 21st. Very structured wines, with a good acidic freshness , expressive of fruit on an excellent citrus base. The harvest took place over 14 days with an average yield per hectare of 8,400 kilograms of grapes, equivalent to 3,650 liters of wine (wine yield: 43%). Winemaking “Corte del Lupo Bianco” is obtained from grapes coming from 13 vineyards which, due to exposure, clones and age guarantee the potential in breadth and integrity of a Ca' del Bosco style white wine. A perfect combination: the fragrance of the Chardonnay fruit and the elegance of Pinot Blanc. In compliance with the Ca' del Bosco Method, the grapes, harvested by hand in small boxes, are promptly coded and cooled in cold storage. Each bunch is selected by expert eyes and hands, to then benefit from our exclusive "bunch spa". A particular washing and hydromassage system for the bunches, using three soaking tanks and a system for complete drying. Only the best first fraction must gives rise to this wine, approximately 1/4 of which is vinified in small oak barrels used the year before for Chardonnay. The remaining portion is vinified in steel vats. The two fractions, after 8 months of aging on their own yeasts, without malolactic fermentation, are assembled; the wine is then bottled by gravity, in a natural way. Thanks to innovative "long cannula" taps, the wine rises from the bottom of the bottle without laminating, without shaking and does not undergo any oxidative shock. No addition of sulphites at this stage, to guarantee integrity and healthiness. Finally, each packaged bottle is uniquely marked to ensure traceability. Bottling May 2023.
